We are very excited as well as lucky to have Chef Tom join our staff as he brings professionalism and exceptional culinary experience to the Table Restaurant.  Tom Ruth, Formerly Chef de Cuisine of The Homestead Hotel, a legendary resort in Hot Springs, Virginia, began his culinary career early-on at the age of 16, working in a small “Mom and Pop” Restaurant, (Charlie’s Brother) in Hopewell, NJ; Tom started by washing dishes, making salads and peeling his fair share of Shrimp. In the 12 years Tom spent with the company, he advanced to Chef of the largest and flagship operation, (Good Time Charlie’s) in Princeton, NJ Moving South, away from the cold winters, Tom opened up Tyler’s Cove Restaurant in the Hammock Shops of Paulie’s Island, SC. Serving Low Country Cuisine, focusing on fresh and local ingredients; indigenous to waters off the coast of South Carolina . Voted “Best New Restaurant” by the Locals.  In 1995 Tom pulled his roots and moved across country to Los Angeles, California; where he was hired to take over the banquet operation at the prestigious Jonathan Club in the downtown section of the city. He soon proved himself and was promoted to Executive Chef at their Beach Club Operations in Santa Monica, where he spent 3 years tooling his craft and reinventing Club Faire. Missing the East Coast, Tom was hired at the “James Beard” Award Winning; Sobeys New South Cuisine, where he was instrumental in fusing his west coast style with new southern recipes.  In 2000, Tom re-connected with former West Coat Chefs; as Chef de Cuisine, at the Ocean Reef Club in Key Largo, FL, the largest private club in the U.S. Tom was tasked with taking over the core restaurants at the club and recreating their identities.  He was then tapped to take over Figure Eight Island Yacht Club in Wilmington, NC in 2004.
Tom spent five seasons with the yacht club honing his craft, until he was once tapped again to take over the kitchens at the illustrious Homestead Resort.
